- 1 1/2 lbs chicken breasts or thighs, cut into strips
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup heavy cream or coconut milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp butter
- 1 tsp lemon juice
- 2 tbsp fresh parsley or cilantro, chopped
- Season chicken with paprika, cumin, turmeric, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Set aside.
- In the same skillet, melt butter and sauté onion until soft, then add garlic and cook 30 seconds.
- Stir in rice and toast for 1 minute.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes until rice is tender.
- Add cream (or coconut milk) and stir until creamy.
- Return chicken to the skillet and drizzle with lemon juice. Simmer 2 minutes to heat through.
- Top with fresh parsley or cilantro and serve warm in bowls.
Notes
- Use coconut milk for a dairy-free version with extra richness.
- Add spinach or peas for more vegetables.
- For extra heat, add chili flakes or cayenne pepper.
