Creamy Spiced Chicken Rice Bowl

A cozy and flavorful rice bowl featuring tender spiced chicken served over creamy, seasoned rice with herbs and aromatics.

  • 1 1/2 lbs chicken breasts or thighs, cut into strips
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream or coconut milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 tsp lemon juice
  • 2 tbsp fresh parsley or cilantro, chopped

Instructions

  1. Season chicken with paprika, cumin, turmeric, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Set aside.
  3. In the same skillet, melt butter and sauté onion until soft, then add garlic and cook 30 seconds.
  4. Stir in rice and toast for 1 minute.
  5. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes until rice is tender.
  6. Add cream (or coconut milk) and stir until creamy.
  7. Return chicken to the skillet and drizzle with lemon juice. Simmer 2 minutes to heat through.
  8. Top with fresh parsley or cilantro and serve warm in bowls.

Notes

  • Use coconut milk for a dairy-free version with extra richness.
  • Add spinach or peas for more vegetables.
  • For extra heat, add chili flakes or cayenne pepper.
