Creamy Tuscan Chicken is a luxurious, restaurant-style dish made with tender seared chicken breasts in a rich garlic Parmesan cream sauce loaded with sun-dried tomatoes and spinach.

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped
  • 2 cups fresh baby spinach
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6-7 minutes per side or until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Pour in heavy cream and stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes until slightly thickened.
  5. Add sun-dried tomatoes and spinach to the sauce. Cook for 2-3 minutes until spinach wilts.
  6. Return chicken to the skillet and spoon sauce over the top. Simmer for another 2-3 minutes to reheat.
  7. Garnish with chopped parsley and serve immediately.

Notes

  • Use boneless chicken thighs for a juicier variation.
  • Serve over pasta, mashed potatoes, or zucchini noodles for a full meal.
  • For extra depth, deglaze the pan with a splash of white wine before adding cream.
