Creamy Tuscan Salmon

- 4 salmon fillets
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh basil for garnish (optional)
- Season salmon fillets with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat. Sear salmon for 3–4 minutes per side until golden. Remove and set aside.
- Add butter to the skillet and sauté garlic for 30 seconds.
- Stir in heavy cream, chicken broth, Parmesan, Italian seasoning, and sun-dried tomatoes. Simmer 2–3 minutes.
- Add spinach and cook until wilted.
- Return salmon to the pan and simmer another 3–4 minutes until cooked through.
- Garnish with basil and serve warm.
Notes
- Use skin-on salmon for maximum moisture.
- Replace spinach with kale if preferred.
- Serve over pasta, mashed potatoes, rice, or crusty bread.
- A splash of white wine can deepen the flavor.
