- 2 ripe avocados, firm
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 cup panko breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
- 1/2 cup Greek yogurt (for dipping sauce)
- 1 tablespoon lime juice
- 1 teaspoon hot sauce
- 1/2 teaspoon garlic powder (for sauce)
- Salt to taste (for sauce)
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut avocados in half, remove the pit, peel, and slice into wedges.
- Place flour in one bowl. In a second bowl, whisk eggs with water. In a third bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and black pepper.
- Dip each avocado slice in flour, then egg mixture, then coat with the breadcrumb mixture.
- Place coated avocado slices on the prepared baking sheet and lightly spray with cooking spray.
- Bake for 15–20 minutes, flipping halfway through, until golden and crispy.
- While baking, mix Greek yogurt, lime juice, hot sauce, garlic powder, and salt to make the dipping sauce.
- Serve avocado fries warm with the dipping sauce on the side.
Notes
- Use slightly firm avocados for best results.
- Adjust seasoning in breadcrumbs to taste.
- The dipping sauce can be made ahead and stored in the fridge for up to 3 days.
