Crispy Broccoli and Cheese Fritters

Golden and crispy broccoli and cheese fritters packed with flavor and perfect as a snack, appetizer, or side dish.

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • 23 tablespoons olive oil, for frying

Instructions

  1. Steam or blanch the broccoli florets for 2–3 minutes until slightly tender. Drain and finely chop.
  2. In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, eggs, flour, breadcrumbs, garlic, salt, pepper, and parsley.
  3. Mix until well combined and the mixture holds together when pressed.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly.
  6. Cook the fritters in batches for 3–4 minutes on each side until golden brown and crispy.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm with your favorite dip or sauce.

Notes

  • You can use frozen broccoli; just thaw and drain well before chopping.
  • Try different cheeses like mozzarella or feta for variation.
  • Bake in the oven at 400°F (200°C) for a healthier option, flipping halfway through.
