- For the Chicken Bites:
- 1 lb boneless chicken breasts, cut into 1-inch pieces
- 1 cup all-purpose flour
- 1 cup breadcrumbs (panko recommended)
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 1/4 cup milk
- Oil for frying (or cooking spray for baking)
- For the Dipping Sauce:
- 1/2 cup mayonnaise
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- In a bowl, mix flour, breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk eggs and milk together.
- Dip each chicken piece into the egg mixture, then coat evenly in the breadcrumb mixture.
- To Fry: Heat oil in a deep pan to 350°F (175°C). Fry chicken bites in batches for 4–5 minutes until golden and cooked through.
- To Bake: Preheat oven to 425°F (220°C). Place coated chicken on a lined baking sheet, lightly spray with oil, and bake 15–18 minutes, flipping halfway.
- Prepare the dipping sauce by mixing mayonnaise, honey, Dijon mustard, and lemon juice until smooth.
- Serve chicken bites hot with dipping sauce.
