Crispy Folded Pizza Sandwich (Pizza Quesadilla Style)

This crispy folded pizza sandwich is a fun, easy mash-up between a pizza and a quesadilla—featuring golden, pan-toasted tortillas stuffed with gooey cheese, sauce, and your favorite toppings.

Ingredients

  • 2 large flour tortillas
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced pepperoni or other toppings (optional)
  • 2 tbsp grated Parmesan cheese (optional)
  • 1 tsp Italian seasoning (optional)
  • 1 tbsp olive oil or butter (for pan)

Instructions

  1. Lay tortillas flat and spread pizza sauce over half of each tortilla.
  2. Top the sauced side with mozzarella cheese and desired toppings (pepperoni, mushrooms, etc.).
  3. Sprinkle with Italian seasoning and Parmesan if using.
  4. Fold each tortilla in half to form a half-moon shape.
  5. Heat olive oil or butter in a skillet over medium heat.
  6. Place folded tortillas in the skillet and cook for 2–3 minutes per side, or until golden brown and crispy, and cheese is melted inside.
  7. Remove from skillet, let cool slightly, then slice and serve warm with extra sauce for dipping.

Notes

  • Use whole wheat or gluten-free tortillas if desired.
  • Great for using up leftover pizza toppings or roasted veggies.
  • Customize with different cheeses like provolone or cheddar.
  • Serve with marinara or ranch for dipping.
