- 1 lb large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil, for frying
- 2 cups cooked white rice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon water + 1 teaspoon cornstarch (for slurry)
- Green onions and sesame seeds, for garnish
- Pat shrimp dry and season lightly with salt and pepper.
- Set up a dredging station with one bowl of flour and cornstarch mixed together, one bowl of beaten eggs, and a plate for dredged shrimp.
- Dip shrimp in flour mixture, then egg, then again in flour mixture. Set aside.
- Heat about 1 inch of vegetable oil in a skillet over medium-high heat. Fry shrimp in batches until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
- In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer.
- Stir in the cornstarch slurry and cook until sauce thickens, about 1–2 minutes.
- Toss fried shrimp in the honey sauce until well coated.
- Serve shrimp over rice and garnish with green onions and sesame seeds.
Notes
- Ensure oil is hot enough before frying to avoid soggy shrimp.
- You can use tempura batter as an alternative for an extra crispy coating.
- The sauce can be doubled if you prefer it extra saucy.
- Use jasmine or brown rice as a base depending on your preference.
