Crispy Sheet Pan Quesadillas

Crispy Sheet Pan Quesadillas are a quick and delicious way to feed a crowd, with layers of cheese, seasoned meat, and veggies baked to golden perfection and cut into shareable squares.

  • 1 lb ground beef or chicken
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/3 cup water
  • 8 large flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (frozen or canned and drained)
  • 1/4 cup diced red onion
  • 1/4 cup chopped bell pepper
  • 1 tablespoon olive oil (for brushing)

Instructions

  1. Preheat oven to 425°F (220°C). Lightly grease a rimmed sheet pan or line with parchment paper.
  2. In a skillet over medium heat, cook ground beef or chicken until browned. Drain excess fat.
  3. Add taco seasoning and water to the meat. Simmer for 5 minutes until thickened. Remove from heat.
  4. Place 4 tortillas overlapping on the prepared sheet pan so that half of each hangs over the sides, and one tortilla in the center to cover the bottom.
  5. Spread the meat evenly over the tortillas. Top with cheese, black beans, corn, red onion, and bell pepper.
  6. Place the remaining 3 tortillas over the filling, then fold the overhanging tortillas toward the center to close.
  7. Brush the top with olive oil and place another baking sheet on top to press down.
  8. Bake for 20–25 minutes or until golden and crisp. Remove top pan for last 5 minutes if needed for extra crispness.
  9. Cool slightly, slice into squares, and serve with salsa, sour cream, or guacamole.

Notes

  • Customize with your favorite fillings like mushrooms, spinach, or jalapeños.
  • Make it vegetarian by omitting meat and adding more beans and veggies.
  • Use a pizza cutter for easy slicing into neat squares.
