Crispy Zucchini Fritters

Savory, golden-brown zucchini fritters that are crispy on the outside and tender on the inside—perfect as a snack, appetizer, or light vegetarian meal.

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • Olive oil or vegetable oil, for frying

Instructions

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze as much liquid as possible from the zucchini using a clean kitchen towel or cheesecloth.
  3. In a large bowl, combine the drained zucchini, onion, garlic, Parmesan, parsley (if using), eggs, flour, pepper, and baking powder. Mix until well combined.
  4. Heat oil in a skillet over medium heat. Once hot, drop heaping tablespoons of the batter into the pan, flattening slightly with a spatula.
  5. Cook for 3–4 minutes per side, or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm with sour cream, yogurt, or your favorite dipping sauce.

Notes

  • Make sure to squeeze out as much water as possible from the zucchini for extra crispiness.
  • These fritters can be made ahead and reheated in the oven or air fryer.
  • Swap in almond flour for a gluten-free version.
