- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (optional)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 teaspoon black pepper
- 1/4 teaspoon baking powder
- Olive oil or vegetable oil, for frying
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze as much liquid as possible from the zucchini using a clean kitchen towel or cheesecloth.
- In a large bowl, combine the drained zucchini, onion, garlic, Parmesan, parsley (if using), eggs, flour, pepper, and baking powder. Mix until well combined.
- Heat oil in a skillet over medium heat. Once hot, drop heaping tablespoons of the batter into the pan, flattening slightly with a spatula.
- Cook for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with sour cream, yogurt, or your favorite dipping sauce.
Notes
- Make sure to squeeze out as much water as possible from the zucchini for extra crispiness.
- These fritters can be made ahead and reheated in the oven or air fryer.
- Swap in almond flour for a gluten-free version.
