Crockpot Chicken & Stuffing with Gravy Drizzle

A comforting, slow-cooked dish featuring tender chicken breasts nestled under seasoned stuffing, finished with a rich gravy drizzle—easy, hearty, and full of classic home-style flavor.

  • 4 boneless, skinless chicken breasts or thighs
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup low-sodium chicken broth
  • 1 box (6 oz) seasoned stuffing mix
  • 1 tsp poultry seasoning or dried thyme
  • Salt and pepper, to taste
  • 1 packet chicken gravy mix
  • 1 cup water
  • Fresh parsley (optional, for garnish)

Instructions

  1. Lightly grease your crockpot with nonstick spray.
  2. Place chicken in the bottom of the crockpot in a single layer. Season with salt, pepper, and poultry seasoning.
  3. Mix the cream of chicken soup with chicken broth in a bowl until smooth. Pour over the chicken.
  4. Sprinkle stuffing mix evenly over the top. Do not stir.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and stuffing is cooked through.
  6. In the last 15 minutes, whisk gravy mix with 1 cup water in a saucepan over medium heat until thickened.
  7. Serve chicken and stuffing hot, drizzled with gravy and garnished with parsley if desired.

Notes

  • Add cheddar cheese to the stuffing during the final 30 minutes for a cheesy upgrade.
  • To make it gluten-free, use certified GF stuffing and soup alternatives.
  • For extra flavor, mix fresh rosemary or sage into the soup mixture.
  • Layer veggies under the chicken for a one-pot balanced meal.
  • Prep ahead and refrigerate the assembled crockpot overnight before cooking.
