Crockpot Chicken & Stuffing

Crockpot Chicken & Stuffing is a comforting, no-fuss meal made with tender chicken breasts, savory stuffing mix, and a creamy sauce, all slow-cooked to perfection in one pot.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 box (6 oz) stuffing mix
  • 1/2 cup water
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a small bowl, mix cream of chicken soup, sour cream, chicken broth, garlic powder, and black pepper.
  3. Spread the mixture over the chicken.
  4. In a separate bowl, mix stuffing mix with 1/2 cup water (and frozen vegetables, if using).
  5. Spoon stuffing mixture over the creamy sauce in the crockpot.
  6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
  7. Fluff the stuffing before serving. Serve warm.

Notes

  • Use cream of mushroom or celery soup for variation.
  • Can be made with chicken thighs for more flavor.
  • Stir halfway through if you prefer moister stuffing.
