- 2 cups cherry tomatoes, halved
 
- 2 medium cucumbers, sliced (or 1 English cucumber)
 
- 1/4 small red onion, thinly sliced
 
- 2 tbsp chopped fresh parsley
 
- 1 tbsp chopped fresh dill
 
- 1 tbsp chopped fresh mint (optional)
 
- 2 tbsp olive oil
 
- 1 tbsp red wine vinegar or lemon juice
