Ingredients

  • 1 1/2 cups radishes, thinly sliced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or white wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine the sliced cucumbers and radishes in a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice (or vinegar), salt, and pepper.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Add the fresh dill, parsley, and chives. Mix to combine.
