- 1 tablespoon coconut oil
- 1 cup shelled pistachios
- 1 cup dried cranberries
- 1/2 teaspoon sea salt (optional)
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a microwave-safe bowl, combine chopped dark chocolate and coconut oil; heat in 30-second intervals, stirring between each, until smooth and fully melted.
- Reserve 2 tablespoons each of pistachios and cranberries for topping, then stir the remaining pistachios and cranberries into the melted chocolate.
- Pour the mixture into the prepared pan and spread evenly.
- Sprinkle reserved pistachios, cranberries, and sea salt over the top.
- Refrigerate for 1–2 hours or until set.
- Lift the chocolate slab from the pan using the parchment overhang and cut into bars or squares.
