Fluffy Homemade Pancakes

Light, fluffy homemade pancakes made from simple pantry ingredients, perfect for a classic breakfast.

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbsp white sugar
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  4. Heat a lightly buttered skillet or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Serve warm with syrup, fruit, or your favorite toppings.

Notes

  • Do not overmix the batter to keep pancakes fluffy.
  • Let the batter rest for 5 minutes before cooking for best texture.
  • Use medium heat to prevent burning.
