Golden, tender, and irresistibly crunchy, these crispy air fryer chicken bites are a healthier take on a classic comfort food. Perfectly seasoned and cooked to juicy perfection, they’re easy to whip up for a crowd or a quick weeknight meal.

Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • Olive oil or cooking spray

Instructions

  1. Pat dry the chicken pieces and season them with salt, pepper, smoked paprika, garlic powder, and onion powder.
  2. In a shallow bowl, mix together panko breadcrumbs and Parmesan cheese.
  3. Lightly spray each chicken piece with olive oil or cooking spray, then dredge through the breadcrumb mixture, pressing lightly to adhere.
  4. Preheat the air fryer to 200°C (400°F) for about 3 minutes.
  5. Arrange chicken bites in a single layer in the air fryer basket, ensuring they don’t overlap.
  6. Cook for 10 minutes, then flip and cook another 5–7 minutes until golden brown and internal temperature reaches 75°C (165°F).
  7. Remove carefully and serve hot with your favorite dipping sauces.

Notes

  • You can use chicken thighs instead of breast for juicier bites.
  • Ensure chicken is lightly coated in oil to help breadcrumbs stick.
  • Breaded chicken can be prepped ahead and stored in the fridge for a few hours before cooking.
  • For a gluten-free version, use gluten-free panko or almond flour.
  • Reheat leftovers in the air fryer at 180°C (350°F) for 3–4 minutes to restore crispiness.
