Fruity Pebble Pancakes

Fruity Pebble Pancakes are colorful, fun, and fluffy pancakes infused with the sweet crunch of Fruity Pebbles cereal. They make a perfect breakfast treat for kids and cereal lovers alike.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup Fruity Pebbles cereal (plus more for topping)
  • Butter or oil for greasing the pan
  • Optional toppings: whipped cream, syrup, extra Fruity Pebbles

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients and stir until just mixed. Do not overmix.
  4. Gently fold in the Fruity Pebbles cereal.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
  8. Flip and cook for another 1–2 minutes until golden and cooked through.
  9. Serve warm with whipped cream, syrup, and extra Fruity Pebbles on top if desired.

Notes

  • For extra crunch, sprinkle Fruity Pebbles on top of the batter once it’s poured on the skillet.
  • Avoid overmixing the batter to keep pancakes fluffy.
  • Best served immediately as the cereal can soften over time.
