- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup Fruity Pebbles cereal (plus more for topping)
- Butter or oil for greasing the pan
- Optional toppings: whipped cream, syrup, extra Fruity Pebbles
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients and stir until just mixed. Do not overmix.
- Gently fold in the Fruity Pebbles cereal.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
- Flip and cook for another 1–2 minutes until golden and cooked through.
- Serve warm with whipped cream, syrup, and extra Fruity Pebbles on top if desired.
Notes
- For extra crunch, sprinkle Fruity Pebbles on top of the batter once it’s poured on the skillet.
- Avoid overmixing the batter to keep pancakes fluffy.
- Best served immediately as the cereal can soften over time.
