- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/4 cup chopped pecans (optional)
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 container (8 oz) whipped topping, thawed (divided)
- 2 packages (3.4 oz each) instant lemon pudding mix
- 2 1/2 cups cold milk
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, combine flour, melted butter, and pecans (if using). Mix until crumbly.
- Press the mixture into the bottom of the baking dish to form a crust.
- Bake for 15–18 minutes or until lightly golden. Let cool completely.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Fold in half of the whipped topping. Spread over the cooled crust.
- In another bowl, whisk together lemon pudding mix and cold milk until thickened (about 2 minutes).
- Spread the pudding over the cream cheese layer.
- Top with the remaining whipped topping.
- Chill for at least 2 hours before serving. Cut into bars.
Notes
- Use freshly squeezed lemon juice in the pudding for extra zing (optional).
- Pecans in the crust add texture, but can be omitted for a nut-free version.
- Chill overnight for firmer bars and easier slicing.
