  • 1 1/2 cups finely grated zucchini (do not squeeze dry)
  • 1/2 cup chocolate chips or chunks
  • Optional: 1/2 tsp espresso powder

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder (if using).
  3. In a large bowl, combine granulated sugar, vegetable oil, and vanilla extract.
  4. Fold in the grated zucchini until evenly mixed.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in chocolate chips or chunks. The batter will be thick and sticky.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  9. Let cool completely before cutting into squares.
