Garlic Butter Chicken

A rich and flavorful garlic butter chicken cooked in a silky butter sauce with herbs, perfect for a quick weeknight dinner.

  • 1 1/2 lbs chicken breasts or thighs, cut into chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • 1/2 tsp Italian seasoning
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken with salt, pepper, and paprika.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the chicken and cook until golden and cooked through, about 5–7 minutes. Remove and set aside.
  4. Lower heat to medium and add remaining butter to the skillet. Stir in the garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth, lemon juice, and Italian seasoning. Simmer for 2–3 minutes.
  6. Return chicken to the skillet and toss to coat in the sauce.
  7. Cook another 2 minutes to thicken slightly.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Add red pepper flakes for heat.
  • Use chicken thighs for juicier results.
  • Serve over rice, mashed potatoes, or pasta.
