  • 2 boneless, skinless chicken breasts, sliced thin
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chopped scallions (green onions)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional for depth of flavor)
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional, for brightness)
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Season sliced chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through. Remove and set aside.
  4. In the same skillet, add garlic and red pepper flakes; sauté until fragrant, about 30 seconds.
  5. Add chopped scallions and cook for 1-2 minutes until just softened.
  6. Return chicken to the skillet. Add cooked spaghetti, soy sauce, oyster sauce, and reserved pasta water. Toss everything together over low heat.
  7. Adjust seasoning with salt, pepper, and lemon juice if using.
  8. Serve immediately, garnished with Parmesan cheese if desired.

Notes

  • For a lighter version, omit the oyster sauce and use low-sodium soy sauce.
  • Use whole wheat or gluten-free spaghetti as preferred.
  • Add vegetables like snap peas or bell peppers for extra color and crunch.
