  • 6 bone-in, skin-on chicken thighs
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary or thyme, chopped
  • 2 tbsp olive oil or melted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice or zest (optional)
  • 1 cup mushrooms or other roasting vegetables (optional)
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, herbs, salt, pepper, and optional lemon juice or zest.
  3. Pat chicken thighs dry and rub the seasoning mixture under the skin and all over the surface.
  4. Place chicken in a baking dish, optionally surrounded by mushrooms or chopped vegetables.
  5. Bake for 35–45 minutes, or until skin is golden and internal temperature reaches 165°F (74°C).
  6. Broil for 2–3 minutes at the end for extra crispiness, if desired.
  7. Rest for 5–10 minutes before serving; garnish with parsley.
