- 1 Prime rib roast (bone-in or boneless)
- 6–8 fresh garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 3 tbsp olive oil or softened butter
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- Optional: 1 tbsp Dijon mustard
- Optional: 1 tsp onion powder
- Preheat your oven to 450°F (230°C).
- In a small bowl, combine garlic, herbs, olive oil or butter, salt, and pepper into a paste.
- Pat the roast dry with paper towels. Rub the garlic-herb mixture all over the meat.
- Place the roast fat-side up on a rack in a roasting pan.
- Roast at 450°F for 20 minutes to sear. Then reduce oven temperature to 325°F (163°C).
- Continue roasting for about 13–15 minutes per pound for medium-rare, or until internal temperature reaches 130°F (54°C).
- Remove from oven, tent with foil, and let rest for 20–30 minutes.
- Slice and serve warm.
