- 4 large russet potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and peel the potatoes, then cut them into thin fries.
- Soak the cut potatoes in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly.
- In a large bowl, toss the fries with olive oil, salt, and pepper.
- Spread the fries in a single layer on the prepared baking sheet. Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
- While the fries are baking, heat a small pan over low heat and gently sauté the minced garlic in 1 teaspoon olive oil for about 1 minute until fragrant but not browned.
- Remove the baked fries from the oven and immediately toss with sautéed garlic, Parmesan cheese, and chopped parsley.
- Serve hot with your favorite dipping sauce if desired.

- For extra crispiness, bake fries on a wire rack placed over the baking sheet.
- Use freshly grated Parmesan for the best flavor and texture.
