- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon hoisin sauce (optional)
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 2 medium carrots, julienned or thinly sliced
- 1/4 cup water or chicken broth
- Salt and pepper to taste
- 1 teaspoon sesame oil (optional)
- Sesame seeds and chopped green onions for garnish (optional)
- In a bowl, mix chicken with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Let marinate for 10-15 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add marinated chicken and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove from pan and set aside.
- Add remaining 1 tablespoon of oil to the pan. Sauté garlic for 30 seconds until fragrant.
- Add onions and carrots and stir-fry for 4-5 minutes until tender-crisp.
- Return the cooked chicken to the pan and pour in water or broth. Stir-fry everything together for another 2 minutes.
- Season with salt, pepper, and sesame oil if using. Mix well to combine.
- Garnish with sesame seeds and green onions if desired. Serve hot over rice or noodles.
