- 1 lb baby potatoes, halved
- 1 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger (optional)
- 1 tbsp toasted sesame seeds
- 2 scallions, thinly sliced
- Salt and pepper to taste
- Boil or steam baby potatoes for 10–12 minutes until just tender. Drain and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add garlic (and ginger if using) and sauté for 1 minute.
- Add the cooked potatoes and sauté for 2–3 minutes until lightly golden.
- In a small bowl, mix soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Pour over the potatoes.
- Cook for another 3–5 minutes, stirring gently to coat potatoes in the glaze. Let the sauce reduce slightly.
- Season with salt and pepper to taste.
- Sprinkle with sesame seeds and scallions just before serving.
