Glazed Paneer with Spiced Grape Reduction

A gourmet vegetarian dish featuring golden-seared paneer cubes glazed in a rich, spiced grape reduction with hints of cinnamon and star anise, perfect as an appetizer or elegant main.

Ingredients

  • 250g paneer, cut into cubes
  • 1 tablespoon olive oil or ghee
  • 1 cup red grapes, halved
  • 1/2 cup grape juice (unsweetened)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 small cinnamon stick
  • 1 star anise
  • 1/4 teaspoon chili flakes (optional)
  • Salt to taste
  • Fresh herbs for garnish (e.g., mint or basil)

Instructions

  1. Heat oil or ghee in a skillet over medium heat. Add paneer cubes and sear on all sides until golden. Remove and set aside.
  2. In the same pan, add grapes and cook for 2-3 minutes until they begin to soften and release juices.
  3. Add grape juice, balsamic vinegar, honey, cinnamon stick, star anise, chili flakes, and a pinch of salt. Simmer for 10–12 minutes until reduced and syrupy.
  4. Return the seared paneer to the pan and gently coat with the grape reduction.
  5. Simmer for another 2–3 minutes, allowing flavors to meld.
  6. Remove cinnamon stick and star anise. Serve warm, garnished with fresh herbs.

Notes

  • Use fresh, firm paneer for best texture.
  • You can substitute red grapes with black grapes for a deeper flavor.
  • Pair with couscous, rice, or crusty bread for a full meal.
  • Adjust sweetness by varying the honey or balsamic ratio.
