Tender roasted chicken legs coated in a flavorful, sticky glaze that caramelizes beautifully in the oven for a delicious and satisfying main dish.

  • 6 chicken legs (drumsticks or whole legs)
  • 2 tbsp olive oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1 tbsp fresh lemon juice (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and lightly grease.
  2. In a small bowl, whisk together soy sauce, honey, ketchup, Dijon mustard, garlic, pepper, paprika, onion powder, and lemon juice.
  3. Pat chicken legs dry and place them on the prepared baking sheet.
  4. Brush the glaze mixture generously over the chicken legs.
  5. Roast in the oven for 35–45 minutes, basting with remaining glaze halfway through, until the chicken is fully cooked (internal temperature of 165°F/74°C) and the skin is caramelized and slightly crispy.
  6. Optional: Broil for 2–3 minutes at the end for extra browning.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

  • You can marinate the chicken in the glaze for 1–2 hours for deeper flavor.
  • Serve with steamed rice or roasted vegetables for a complete meal.
  • Leftovers can be stored in the fridge for up to 3 days.
