- 1 1/2 cups corn kernels (fresh, frozen, or canned and drained)
- 1/4 cup chopped fresh chives
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 tsp baking powder
- 2 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- Vegetable oil, for frying
- Optional: pinch of paprika or chili flakes for extra flavor
- In a large mixing bowl, combine flour, cornmeal, baking powder, salt, pepper, and optional paprika or chili flakes.
- In a separate bowl, whisk together eggs and milk until well combined.
- Add the egg mixture to the dry ingredients and mix to form a thick batter.
- Fold in the corn kernels and chopped chives.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, shaping into small wedge-like fritters.
- Fry for 2–3 minutes per side, or until golden and crisp.
- Remove and drain on paper towels. Serve warm with your favorite dipping sauce.
Notes
- Make sure the oil is hot enough before frying to ensure crispiness.
- You can use spring onions if chives aren’t available.
- These can be made ahead and reheated in the oven or air fryer.
