- 1 grilled chicken breast, sliced
- 1/2 ripe avocado, sliced or mashed
- 1 leaf lettuce or handful of arugula
- 2 slices tomato
- 2 slices red onion (optional)
- 1 slice cheese (optional, such as provolone or Swiss)
- 1 tbsp mayonnaise or aioli (optional)
- Salt and pepper to taste
- Olive oil or butter for grilling (optional)
- Season the chicken breast with salt and pepper. Grill over medium heat for 5–7 minutes per side, or until cooked through and juices run clear. Let rest, then slice.
- Toast the bagel halves until golden and crisp.
- If using, spread mayonnaise or aioli on the bottom half of the bagel.
- Layer grilled chicken, avocado, tomato, onion, cheese (if using), and lettuce or arugula on the bagel base.
- Top with the other bagel half and press gently.
- Serve immediately, warm or at room temperature.
