2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper to taste
1 tbsp butter
1 cup sliced mushrooms (cremini or button)
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth
1/4 tsp thyme (optional)
2 cups broccoli florets
2 cups frozen French fries
Fresh parsley for garnish (optional)
Instructions
Preheat oven and cook fries according to package instructions.
Season chicken breasts with salt and pepper. Grill over medium heat for 5–7 minutes per side until cooked through and juices run clear. Set aside to rest.
In a skillet, melt butter over medium heat. Add mushrooms and sauté for 5–6 minutes until softened.
Add garlic and cook for 1 minute until fragrant.
Pour in chicken broth and bring to a simmer. Add cream and thyme, and cook until sauce thickens slightly, about 4–5 minutes.
Steam broccoli in a steamer basket or microwave until tender, about 5 minutes.
Plate grilled chicken and top with creamy mushroom sauce. Serve with steamed broccoli and crispy fries on the side.
Garnish with chopped parsley if desired.
Notes
You can substitute heavy cream with half-and-half or a dairy-free alternative for a lighter version.
For added flavor, marinate chicken in garlic and lemon juice before grilling.
