  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons balsamic vinaigrette or dressing of choice

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
  3. Grill chicken for 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (74°C).
  4. Remove from grill and let rest for 5 minutes, then slice into strips.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  6. Top the salad with grilled chicken slices and crumbled feta cheese if using.
  7. Drizzle with balsamic vinaigrette or your preferred dressing.
  8. Toss gently and serve immediately.
