Grilled Chicken Skewers

Grilled Chicken Skewers are a delicious and easy-to-make dish featuring marinated chunks of juicy chicken grilled to perfection on skewers. Ideal for barbecues, picnics, or a flavorful weeknight meal.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers
  • Optional: chopped parsley and lemon wedges for serving

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  3. Add chicken pieces to the marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  4. Preheat grill to medium-high heat. Thread marinated chicken pieces onto skewers.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has nice grill marks.
  6. Remove from grill and rest for a few minutes. Garnish with parsley and serve with lemon wedges if desired.

Notes

  • Use chicken thighs for extra juiciness and flavor.
  • Great served with rice, salad, or tzatziki sauce.
  • You can customize the marinade with other spices or fresh herbs.
