- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
- Optional: chopped parsley and lemon wedges for serving
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken pieces to the marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- Preheat grill to medium-high heat. Thread marinated chicken pieces onto skewers.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has nice grill marks.
- Remove from grill and rest for a few minutes. Garnish with parsley and serve with lemon wedges if desired.
Notes
- Use chicken thighs for extra juiciness and flavor.
- Great served with rice, salad, or tzatziki sauce.
- You can customize the marinade with other spices or fresh herbs.
