  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • Fresh lime wedges for serving
  • 2 tbsp creamy sauce or sour cream (optional)

Instructions

  1. In a bowl, mix olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Add chicken and marinate for 30 minutes to 2 hours.
  2. Grill the marinated chicken on a hot grill or grill pan for 4–6 minutes per side, until fully cooked and slightly charred. Let it rest for 5 minutes.
  3. Warm tortillas on the grill or in a pan until soft and pliable.
  4. Slice the grilled chicken into strips. Layer into tortillas.
  5. Top each taco with diced red onion, chopped cilantro, and optional creamy sauce or sour cream.
  6. Serve immediately with lime wedges on the side.

  • Use chicken thighs for juicier tacos or breasts for a leaner option.
  • Warm tortillas to prevent them from cracking.
  • For spicier tacos, add hot sauce or jalapeños.
