Grilled Pineapple Shrimp Skewers with Sweet Chili Glaze

These tropical-inspired skewers feature juicy shrimp and caramelized pineapple, grilled to perfection and brushed with a sweet chili glaze. A quick and flavorful recipe perfect for barbecues or weeknight dinners.

Ingredients

  • Large shrimp, peeled and deveined
  • Fresh pineapple chunks
  • Sweet chili sauce
  • Soy sauce
  • Garlic, minced
  • Lime juice
  • Olive oil
  • Wooden or metal skewers
  • Optional garnish: chopped cilantro or green onions

Instructions

  1. If using wooden skewers, soak in water for at least 30 minutes.
  2. In a bowl, combine sweet chili sauce, soy sauce, garlic, lime juice, and olive oil.
  3. Thread shrimp and pineapple alternately onto skewers.
  4. Preheat grill to medium-high. Brush skewers with marinade.
  5. Grill for 2–3 minutes per side, brushing with more glaze until shrimp are pink and slightly charred.
  6. Serve warm with optional garnish.

  • Add vegetables like bell peppers or red onion to the skewers.
