Ground Beef and Kale Skillet

A simple, nutritious, one-pan skillet made with seasoned ground beef, tender kale, and savory aromatics for a quick and hearty weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chopped kale, stems removed
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 cup beef broth
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon.
  4. Season with paprika, oregano, salt, pepper, and red pepper flakes if using.
  5. Add chopped kale and stir until it begins to wilt.
  6. Pour in beef broth and cherry tomatoes. Stir, cover, and let simmer for 5–7 minutes until kale is tender.
  7. Uncover and cook another 2 minutes to evaporate excess liquid if needed.
  8. Serve warm as-is, over rice, or with crusty bread.

Notes

  • Use spinach instead of kale for a softer texture.
  • Add cooked rice or quinoa directly to the skillet to make it a complete one-pan meal.
  • A splash of soy sauce or Worcestershire sauce can deepen the flavor.
