- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup strawberry or raspberry jam
- Powdered sugar for dusting (optional)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour and salt.
- Gradually add the dry mixture to the wet ingredients to form a soft dough.
- Divide dough in half, wrap in plastic, and chill for 20–30 minutes.
- Roll dough to about 1/4-inch thickness on a floured surface.
- Cut out heart-shaped cookies. Cut a smaller heart from the center of half of the cookies (these will be the tops).
- Place cookies on the baking sheet and bake for 8–10 minutes or until edges are lightly golden.
- Cool completely. Dust the cut-out tops with powdered sugar if desired.
- Spoon a small amount of jam onto each bottom cookie and gently press a top cookie over it to sandwich.
Notes
- Use seedless jam for the cleanest appearance.
- Do not overbake—cookies should stay pale for a soft texture.
- Try different jams like apricot, blueberry, or cherry.
- Chill dough again after cutting if cookies spread too much.
