Hearty Beef and Bean Chili

A robust, comforting chili loaded with ground beef, beans, tomatoes, and warm spices—slow-simmered for deep, hearty flavour.

  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper, cooking until softened.
  2. Stir in garlic and cook for 1 minute.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne.
  5. Add tomato paste, diced tomatoes, beans, and beef broth. Mix well.
  6. Bring to a simmer, then reduce heat to low.
  7. Cover and cook for 30–40 minutes, stirring occasionally, until thickened and flavourful.
  8. Adjust seasoning and serve hot.

Notes

  • For richer depth, simmer for up to 1 hour.
  • Top with cheese, sour cream, or green onions if desired.
  • Can be made ahead and tastes even better the next day.
