- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chopped green cabbage
- 2 carrots, peeled and sliced
- 4 cups beef broth
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup uncooked white rice
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add diced onion and garlic to the pot and sauté for 2–3 minutes until fragrant.
- Stir in chopped cabbage and carrots. Cook for 5 minutes, stirring occasionally.
- Add beef broth, tomato sauce, diced tomatoes, rice, Worcestershire sauce, oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until rice is tender and cabbage is cooked through.
- Adjust seasoning to taste. Serve hot, garnished with fresh parsley if desired.
Notes
- Use ground turkey or pork as a substitute for ground beef.
- Brown rice can be used, but cooking time may need to be extended.
- This soup freezes well for meal prep or leftovers.
