Hearty Cabbage Roll Soup

Hearty Cabbage Roll Soup is a comforting, one-pot dish that combines all the classic flavors of stuffed cabbage rolls in a rich tomato broth, filled with ground meat, tender cabbage, and rice.

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups chopped green cabbage
  • 2 carrots, peeled and sliced
  • 4 cups beef broth
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup uncooked white rice
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add diced onion and garlic to the pot and sauté for 2–3 minutes until fragrant.
  3. Stir in chopped cabbage and carrots. Cook for 5 minutes, stirring occasionally.
  4. Add beef broth, tomato sauce, diced tomatoes, rice, Worcestershire sauce, oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until rice is tender and cabbage is cooked through.
  6. Adjust seasoning to taste. Serve hot, garnished with fresh parsley if desired.

Notes

  • Use ground turkey or pork as a substitute for ground beef.
  • Brown rice can be used, but cooking time may need to be extended.
  • This soup freezes well for meal prep or leftovers.
