  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables begin to soften.
  2. Pour in chicken broth and bring to a boil.
  3. Add thyme, oregano, salt, and pepper. Stir to combine.
  4. Add egg noodles and cook according to package instructions, usually 8–10 minutes.
  5. Stir in cooked chicken and simmer for 5 more minutes to heat through.
  6. Adjust seasoning if needed. Stir in fresh parsley before serving, if using.

Notes

  • Use rotisserie chicken for a quick prep option.
  • For extra flavor, add a bay leaf while simmering and remove before serving.
  • Soup can be stored in the fridge for up to 4 days or frozen without noodles to prevent sogginess.
