Hearty Classic Beef Stew

A hearty and comforting classic beef stew filled with tender beef chunks, vegetables, and a rich, savory broth perfect for cold days.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, can substitute with more broth)
  • 3 large carrots, sliced
  • 3 large potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Toss beef cubes with flour until evenly coated.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. Brown the beef in batches, setting aside each batch once browned.
  4. In the same pot, add chopped onion and garlic; sauté until translucent.
  5. Stir in tomato paste, then deglaze the pot with red wine, scraping up browned bits.
  6. Return beef to the pot and add beef broth, thyme, rosemary, and bay leaves.
  7. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
  8. Add carrots, potatoes, and celery. Cover and cook for another 45 minutes, or until vegetables and beef are tender.
  9. Season with salt and pepper to taste. Remove bay leaves.
  10. Garnish with chopped parsley and serve hot.

Notes

  • For extra depth, sear the beef in small batches to avoid steaming.
  • Can be made a day ahead; flavor improves overnight.
  • Freezes well for up to 3 months.
  • Use pearl onions for added sweetness if desired.
