- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional, can substitute with more broth)
- 3 large carrots, sliced
- 3 large potatoes, peeled and diced
- 2 celery stalks, chopped
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
- Toss beef cubes with flour until evenly coated.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Brown the beef in batches, setting aside each batch once browned.
- In the same pot, add chopped onion and garlic; sauté until translucent.
- Stir in tomato paste, then deglaze the pot with red wine, scraping up browned bits.
- Return beef to the pot and add beef broth, thyme, rosemary, and bay leaves.
- Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
- Add carrots, potatoes, and celery. Cover and cook for another 45 minutes, or until vegetables and beef are tender.
- Season with salt and pepper to taste. Remove bay leaves.
- Garnish with chopped parsley and serve hot.

- For extra depth, sear the beef in small batches to avoid steaming.
- Can be made a day ahead; flavor improves overnight.
- Freezes well for up to 3 months.
- Use pearl onions for added sweetness if desired.
