Hearty Sausage and Tomato Rice Soup

A rich and flavorful sausage and tomato rice soup packed with savory sausage, tender rice, and a robust tomato broth. This hearty soup is perfect for cozy dinners and meal prep.

  • 1 tablespoon olive oil
  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 6 cups chicken broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 3/4 cup uncooked long grain white rice
  • 2 cups chopped fresh spinach or kale (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, crumbling it as it cooks.
  2. Add diced onion and bell pepper. Sauté for 5 minutes until vegetables are softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add diced tomatoes, tomato sauce, chicken broth, basil, oregano, smoked paprika, salt, and pepper. Stir to combine.
  5. Bring to a boil, then stir in uncooked rice. Reduce heat and simmer for 15–20 minutes, or until rice is tender.
  6. If using spinach or kale, stir it in during the last 3 minutes of cooking until wilted.
  7. Adjust seasoning as needed. Serve hot, topped with grated Parmesan if desired.

Notes

  • The soup will thicken as it sits; add extra broth or water when reheating.
  • Use brown rice for a whole grain option but increase cooking time by 10–15 minutes.
  • Turkey or chicken sausage can be used for a lighter version.
  • Great for meal prep—store in airtight containers for up to 3 days.
