- 3 cups rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup cashews, chopped
- 1/4 cup sunflower seeds
- 1/4 cup shredded coconut (optional)
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil or olive oil
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup dried cranberries
- 1/2 cup raisins
- 1/4 cup chopped dried apricots
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, combine oats, chopped nuts, seeds, coconut (if using), cinnamon, and salt.
- In a small saucepan, warm honey (or maple syrup), oil, and vanilla extract over low heat until melted and combined.
- Pour wet mixture over dry ingredients and stir to coat evenly.
- Spread granola mixture evenly onto prepared baking sheet.
- Bake for 25–30 minutes, stirring halfway through, until golden brown.
- Let cool completely before mixing in dried fruits.
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
- Customize with your favorite nuts and dried fruits.
- For chunkier granola, press mixture firmly into pan and avoid stirring while baking.
- Delicious over yogurt, smoothie bowls, or with milk.
