Homemade Nut‑and‑Herb Quick Bread (Savory Loaf)

A comforting and filling noodle soup packed with tender meat chunks, fresh broccoli, sweet carrots, and savory broth, perfect for a cozy meal.

Ingredients

  • 200g beef or chicken, cut into bite-sized chunks
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 6 cups chicken or beef broth
  • 150g egg noodles or your choice of noodles
  • 1 tbsp soy sauce
  • 1/2 tsp black pepper
  • Salt to taste
  • 1/4 tsp dried thyme (optional)
  • Fresh parsley or green onions for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3 minutes.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add meat chunks and cook until browned on all sides.
  4. Pour in broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until meat is tender.
  5. Add carrots and cook for 5 minutes.
  6. Add noodles and cook according to package instructions, usually 6–8 minutes.
  7. Add broccoli in the last 3 minutes of cooking to keep it vibrant and slightly crisp.
  8. Season with soy sauce, pepper, salt, and thyme if using. Stir to combine.
  9. Serve hot, garnished with fresh parsley or green onions.

Notes

  • Use bone broth for added richness and nutrients.
  • Swap beef or chicken for tofu or plant-based meat for a vegetarian option.
  • For extra depth, add a dash of fish sauce or a squeeze of lemon juice before serving.
