- 200g beef or chicken, cut into bite-sized chunks
- 1 tbsp vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 cup broccoli florets
- 6 cups chicken or beef broth
- 150g egg noodles or your choice of noodles
- 1 tbsp soy sauce
- 1/2 tsp black pepper
- Salt to taste
- 1/4 tsp dried thyme (optional)
- Fresh parsley or green onions for garnish
- Heat oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3 minutes.
- Add garlic and sauté for 1 minute until fragrant.
- Add meat chunks and cook until browned on all sides.

- Add broccoli in the last 3 minutes of cooking to keep it vibrant and slightly crisp.
- Season with soy sauce, pepper, salt, and thyme if using. Stir to combine.
- Serve hot, garnished with fresh parsley or green onions.
