- 1 tbsp olive oil
 
- 1 tsp garlic powder
 
- 1 tsp dried thyme or rosemary

- In a bowl, whisk honey, soy sauce, garlic, ginger (if using), smoked paprika, olive oil, salt, and pepper. Add drumsticks to coat and marinate 15–30 minutes (or refrigerate overnight).
 
- Preheat oven to 200 °C (400 °F). Toss potatoes, carrots, pepper, and zucchini with oil, garlic powder, herbs, salt, and pepper—spread evenly on a rimmed baking sheet.
 
- Place drumsticks on one side of the sheet, skin-side up, reserving extra marinade. Bake 25 minutes until chicken begins browning and vegetables soften.
 
- Remove tray, brush drumsticks with reserved (reheated) marinade, toss vegetables, then bake another 15–20 minutes until chicken reaches 75 °C (165 °F) and veggies caramelize.
