- 2 tbsp olive oil
- 1/3 cup honey
- 2 tbsp soy sauce or tamari
- 2 garlic cloves, minced
- 1 tsp fresh grated ginger (optional)
- 1 tsp smoked paprika
- Salt & freshly ground black pepper
- For roasted vegetables:
- 2 cups baby potatoes (halved) or diced regular potatoes
- 2 carrots, cut into sticks
- 1 bell pepper, sliced
- 1 zucchini (or broccoli) cut into florets
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme or rosemary
- Salt & pepper to taste
- In a bowl, whisk honey, soy sauce, garlic, ginger (if using), smoked paprika, olive oil, salt, and pepper. Add drumsticks to coat and marinate 15–30 minutes (or refrigerate overnight).
- Preheat oven to 200 °C (400 °F). Toss potatoes, carrots, pepper, and zucchini with oil, garlic powder, herbs, salt, and pepper—spread evenly on a rimmed baking sheet.
- Place drumsticks on one side of the sheet, skin-side up, reserving extra marinade. Bake 25 minutes until chicken begins browning and vegetables soften.
- Remove tray, brush drumsticks with reserved (reheated) marinade, toss vegetables, then bake another 15–20 minutes until chicken reaches 75 °C (165 °F) and veggies caramelize.
- Optional: broil 1–2 minutes for extra crispness. Let chicken rest 5 minutes before serving with pan juices spooned over both.
