Sweet, savory, and tender, these Honey Glazed Drumsticks with roasted vegetables offer a wholesome, one-pan meal that’s ideal for easy weeknight dinners or laid-back weekend gatherings.

  • 812 chicken drumsticks (skin-on for crispiness)
  • 2 tbsp olive oil
  • 1/3 cup honey
  • 2 tbsp soy sauce or tamari
  • 2 garlic cloves, minced
  • 1 tsp fresh grated ginger (optional)
  • 1 tsp smoked paprika
  • Salt & freshly ground black pepper
  • For roasted vegetables:
  • 2 cups baby potatoes (halved) or diced regular potatoes
  • 2 carrots, cut into sticks
  • 1 bell pepper, sliced
  • 1 zucchini (or broccoli) cut into florets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • Salt & pepper to taste

Instructions

  1. In a bowl, whisk honey, soy sauce, garlic, ginger (if using), smoked paprika, olive oil, salt, and pepper. Add drumsticks to coat and marinate 15–30 minutes (or refrigerate overnight).
  2. Preheat oven to 200 °C (400 °F). Toss potatoes, carrots, pepper, and zucchini with oil, garlic powder, herbs, salt, and pepper—spread evenly on a rimmed baking sheet.
  3. Place drumsticks on one side of the sheet, skin-side up, reserving extra marinade. Bake 25 minutes until chicken begins browning and vegetables soften.
  4. Remove tray, brush drumsticks with reserved (reheated) marinade, toss vegetables, then bake another 15–20 minutes until chicken reaches 75 °C (165 °F) and veggies caramelize.
  5. Optional: broil 1–2 minutes for extra crispness. Let chicken rest 5 minutes before serving with pan juices spooned over both.

  • For extra heat, stir chili powder or hot sauce into the marinade.
  • Brighten flavors with orange or lemon zest in the glaze.
  • Use sweet potatoes, Brussels sprouts, cauliflower, or green beans for vegetable swaps.
