Hot Chocolate Cookies with Marshmallows

Soft and fudgy hot chocolate–inspired cookies filled with cocoa flavor and topped with gooey marshmallows, creating a cozy winter treat.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup hot chocolate mix
  • 1 cup chocolate chips
  • 12 large marshmallows, cut in half (or 2 cups mini marshmallows)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the egg and vanilla extract.
  4. In a separate bowl, whisk flour, cocoa powder, hot chocolate mix, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture and stir until dough forms.
  6. Fold in chocolate chips.
  7. Roll dough into balls and place on the baking sheet.
  8. Bake 8 minutes, then remove cookies and quickly press a marshmallow half (or a few minis) into the center of each.
  9. Return to oven for 2–3 minutes until marshmallows puff slightly.
  10. Cool cookies on the baking sheet for 5 minutes before transferring to a rack.

Notes

  • Freeze marshmallows for 10 minutes before baking to help them keep their shape.
  • Drizzle melted chocolate on top for extra richness.
  • Use flavored hot cocoa mix (peppermint, dark chocolate) for variations.
