- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup hot chocolate mix
- 1 cup chocolate chips
- 12 large marshmallows, cut in half (or 2 cups mini marshmallows)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until fluffy.
- Mix in the egg and vanilla extract.
- In a separate bowl, whisk flour, cocoa powder, hot chocolate mix, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture and stir until dough forms.
- Fold in chocolate chips.
- Roll dough into balls and place on the baking sheet.
- Bake 8 minutes, then remove cookies and quickly press a marshmallow half (or a few minis) into the center of each.
- Return to oven for 2–3 minutes until marshmallows puff slightly.
- Cool cookies on the baking sheet for 5 minutes before transferring to a rack.
Notes
- Freeze marshmallows for 10 minutes before baking to help them keep their shape.
- Drizzle melted chocolate on top for extra richness.
- Use flavored hot cocoa mix (peppermint, dark chocolate) for variations.
