A refreshing twist on the classic mojito, featuring Irish whiskey instead of rum, bright lime, fresh mint, and a touch of sweetness for a crisp, easy-to-make cocktail.

Ingredients

  • 1 oz freshly squeezed lime juice (about half a lime)
  • ½ oz simple syrup (adjust to taste)
  • 68 fresh mint leaves, plus extra for garnish
  • Sparkling water or club soda, to top
  • Ice cubes
  • Lime wheel or wedge (for garnish)

Instructions

  1. In a sturdy glass or cocktail shaker, gently muddle the mint leaves with lime juice and simple syrup—just enough to release the mint oils.
  2. Add Irish whiskey and fill the glass with ice.
  3. Stir (or shake lightly if using a shaker) to combine and chill.
  4. Strain into a serving glass filled with fresh ice.
  5. Top with sparkling water or club soda, stirring gently to integrate.
  6. Garnish with a sprig of mint and a lime wheel. Serve immediately.
