- 1 pound Italian sausages
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt, to taste
- Black pepper, to taste
- Fresh basil or parsley, chopped (optional)
- Heat olive oil in a large skillet over medium heat.
- Add Italian sausages and brown on all sides. Remove and set aside.
- In the same skillet, add chopped onion and sauté until soft and translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in tomato paste, crushed tomatoes, oregano, basil, and red pepper flakes.
- Season with salt and black pepper and bring the sauce to a gentle simmer.
- Return the sausages to the skillet, cover, and simmer for 25–30 minutes until sausages are fully cooked.
- Garnish with fresh herbs if desired and serve hot.
Notes
- Serve over spaghetti, polenta, or with toasted bread.
- You can use spicy or mild Italian sausages.
- Leftovers keep well refrigerated for up to 3 days.
