Kale Caesar Salad with Croutons

A hearty twist on the classic Caesar salad, made with nutrient-rich kale, crunchy croutons, and a creamy Caesar dressing.

Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1 tablespoon olive oil (for massaging kale)
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup Caesar dressing (store-bought or homemade)
  • Salt and pepper to taste
  • Optional: lemon wedges for serving

Instructions

  1. Wash and thoroughly dry the kale. Remove stems and chop leaves into bite-sized pieces.
  2. Place kale in a large bowl, drizzle with olive oil, and massage for 2-3 minutes until tender.
  3. Add Caesar dressing to the kale and toss to coat evenly.
  4. Mix in grated Parmesan and croutons.
  5. Season with salt and pepper to taste.
  6. Serve immediately, optionally with a squeeze of fresh lemon juice.
